Easter Candy Egg Making

What time is it?    Easter candy making time!!!

I'm super happy today because I got to dip candy eggs.

Yum!  Yum!  Yum!

My mom grew up making these every year when she was a kid.  Everyone in her family loves them, so it's kind of a family tradition to make them every year (or most years).

There are a variety of flavors you can make from one basic recipe.

Vanilla Creme

Chocolate

Peanut Butter Krispy

We made some egg-shaped ones but decided that circles were easier... and less disturbing looking...

They are basically like chocolate coated frosting...

HAHA!
I just realized that we made cake balls for Christmas and now we're making "frosting" balls for Easter!

Dang!  I'm making my mouth water.

Easter Bunny, eat your heart out!

The Easter Bunny is going to have a tummy-ache tonight!!!

Ok, ok I guess I'll get to the important stuff:

Butter Creme Eggs
Yields about 6 dozen

1 stick butter, softened
1 8-oz cream cheese, softened (low fat works great too)
2 lbs powdered sugar
1 tsp vanilla

Cream together butter and cream cheese.  Stir in vanilla.  Add in powdered sugar and beat until well combined.  Refrigerate until firm; dip in melted chocolate and allow to cool on waxed paper.

Variations:
1.  Coconut Creme:  Add 2 cups coconut
2.  Peanut Butter Creme: Add 2 cups peanut butter
3.  Chocolate Creme: Add 1/2 cup cocoa powder

If you don't want a gazillion eggs, you can make 1 batch of the basic recipe, then divide it into equal portions and add the ingredients to each portion for the variations.

Peanut Butter Krispy Eggs
Yields about 5-6 dozen

1/2 cup butter
16-18 oz smooth peanut butter
1 lb powdered sugar
4 cups Rice Krispies Ceral

Melt butter and peanut butter together.  Add powdered sugar and mix well.  Add Rice Krispies ceral with hands.  Mixture will be dry, so really smash it all together.  Shape into eggs and dip in melted chocolate.  Allow to cool on waxed paper.

Cream together butter and cream cheese.  Stir in vanilla.  Add in powdered sugar and beat until well combined.

Question of the day:
What is your favorite Easter dinner dish?

Mine:
I have no clue.  They're almost all good.

  2. Mine is the coconut egg that is like a mounds bar. We also have a Sensinger Easter tradition of making a Moravian cake to be eaten for Easter breakfast. It made from a raised dough and is great when eaten warm.

  3. Oh boy those look good!!! Frosting is my weakness! For me, funeral potatoes and deviled eggs are a must on Easter.
